GRILLED CHICKEN SALAD

Early this year, I decided the time had come for me to change my diet. I’m not talking about going on a diet, but rather a complete overhaul of the way I ate. I reduced my intake of simple carbohydrates and increased the amount of meat and vegetables in my daily diet, the results were astonishing, I lost 8KG in three months. These days I find myself eating salads all the time. I was never one who liked raw vegetables, but now I crave for a delicious salad. My favourites include those with grilled chicken, egg and lots of cheese.

You could of course prepare salads at home. There are lots of healthy, full flavoured ingredients that you could include into a basic grilled chicken salad.
If you want to prepare a diet cantered salad but can’t bear the sight of another leafy green dish, a Grilled Chicken Salad may just be what the doctor ordered. Grilled chicken breast is a great source of lean protein and colourful vegetables, especially the leafy, dark green variety, provides us with a spectrum of vitamins, nutrients, and antioxidants.
FLAMING WHEELS RECIPE
Here’s something to try at home. To start, preheat a grill or grill pan to medium high.
Make the dressing: Chop 2 garlic cloves and puree with 1/2 cup olive oil, the anchovies and lemon juice in a blender until smooth; season with salt and pepper.
Pound the chicken with a mallet or heavy skillet until about 1/8 inch thick. Season with salt and pepper and toss with 1 tablespoon of the Caesar dressing. Grill the chicken until golden and crisp, 3 to 4 minutes per side.
Brush the bread with olive oil on both sides and grill, turning, until toasted, do this for about 2 minutes. Rub with the remaining garlic clove. Brush the romaine with 1 to 2 tablespoons of the dressing and grill until marked, 1 to 2 minutes per side. Chop the lettuce and transfer to a bowl.
Cut the bread and chicken into bite-size pieces and add to the bowl. Toss with the remaining dressing, the parmesan, and pepper to taste. Garnish with more parmesan.
